IMPORTANT : All ingredients should be at room temperature.

Ingredients:

  • 3 eggs
  • 1.5 vati Maida
  • 1vati sugar (you can add 2-3 tablespoon more if your sugar is less sweet, in Canada sugar is not sweet)
  • 120 gm unsalted butter
  • Vanilla essence 1-2 teaspoon
  • Baking Powder 1 teaspoon

[1 vati : a Big vati approx 120 gm. Use same vati for measuring maida, sugar.]

How to measure butter, if you do not have weighing scale?
When you buy a block of unsalted butter, see the gm weight on it. its generally 250 gm, 425 gm etc. Do the calculation and cut the block by visually analyzing the block. But try to be as accurate as possible.

Procedure:

  1. Take a bowl add 120 gm butter (at room temperature). Using spoon, break the block and start stirring the butter using a whisk or a good spoon.
  2. Once the butter turns semi liquid, add 1 vati sugar. Keep stirring the butter and sugar vigorously. This mixture should turn light yellow and fluffy. The sugar granules will get completely dissolved and butter will start looking fluffy.
  3. Add 1 egg and stir vigorously, till the egg disappears in the mixture.
  4. Add 2nd egg and stir again, let it disappear in the mixture.
  5. Add 3rd egg and stir and let it blend in the mixture.
  6. Adding 1 egg at a time is very important.
  7. This mixture should look creamy, fluffy and blended. No trace of individual ingredient is visible.
  8. Start Preheating the oven 180 degrees for 15 min.
  9. To this mixture add Maida and mix the batter using cut and fold method. Don't mix it too much. Or else the air will escape and cake will become dense.
  10. When adding Maida, add in small quantities and mix. Don't add all Maida at once. Add 2-3 spoons and fold and mix. Add next 2-3 spoons and so on..
  11. Finally add baking powder and vanilla essence and lightly mix it again.
  12. Take a 6"-8" dia pan or rectangular tray coat it with butter, cover it with butter paper and apply a coat of butter over the butter paper as well.
  13. Add the batter and bake the cake for 45-50 min in oven at 180 Degree Celsius (360 Degree Fahrenheit)
