Crispy Air-Fried Chole (Chickpea/Garbanzo Bean) Snack
Ingredients
For the crispy chole:
1 cup dry chole (garbanzo beans)
Salt, as needed
½–1 tablespoon oil (for air frying)
For the masala coating:
¼ tablespoon spicy red chili powder
½ tablespoon Kashmiri red chili powder
½ tablespoon salt
½ tablespoon chaat masala
¼ tablespoon sugar
(Adjust spice levels according to your preference.)
Preparation
1. Soak the chole
Start by rinsing 1 cup of dry chole thoroughly under running water. Transfer them to a large bowl and fill the bowl completely with water.
Let the chole soak overnight, or until they are fully hydrated. The chickpeas should become noticeably larger and should not have any hard or dry centers when cut open.
Tip: If you are short on time, you can use warm water for soaking. This helps the chickpeas absorb water faster and more evenly.
2. Rinse and prepare the soaked chole
Once the chole are properly soaked:
Drain the soaking water.
Rinse the chickpeas thoroughly.
Wash away any excess starch or stickiness from the surface.
This step helps the final snack become crispier.
3. Optional: Parboil the chhole
This step is optional, but I personally recommend it because it gives the chhole a softer interior while allowing the outside to become perfectly crispy.
Bring water to a boil in a large pot.
Add 1 tablespoon of salt.
Add the soaked chole and boil for 5–6 minutes.
The chole should be partially cooked but still firm.
Drain the water, rinse under cold water, and allow them to cool.
4. Dry the chole completely
Spread the chole on a clean kitchen towel or paper towel and gently pat them dry.
Removing surface moisture is one of the most important steps in getting crispy air-fried chole.
Air Frying the Chole
First stage: Remove moisture
Preheat your air fryer to 400°F (205°C) for 4–5 minutes.
Place the chole in the air fryer basket in a single, even layer.
Avoid overcrowding the basket. Too many chickpeas together will trap steam and prevent them from becoming crispy.
Air fry at 400°F for 5 minutes.
Second stage: Crisping
Remove the basket and lightly spray or drizzle ½–1 tablespoon oil over the chole.
Gently mix to coat evenly.
Reduce the temperature to 325°F (165°C).
Air fry for another 10–12 minutes.
Check every few minutes and shake the basket to ensure even cooking.
If some chickpeas look dry or are browning too quickly, add a very small amount of oil.
Continue air frying for another couple of minutes if needed until the chole are golden and crispy.
Preparing the Masala Coating
While the chole are cooking, prepare the spice mix.
In a small bowl, combine:
¼ tablespoon spicy red chili powder
½ tablespoon Kashmiri red chili powder
½ tablespoon salt
½ tablespoon chaat masala
¼ tablespoon sugar
Mix everything thoroughly.
The Kashmiri chili powder adds beautiful color and mild warmth, while chaat masala provides the tangy, savory flavor that makes this snack addictive.
Final Assembly
Transfer the hot crispy chole immediately into a large bowl.
Add the prepared masala mixture.
Toss well until every chickpea is evenly coated.
Transfer the coated chole onto a flat plate and spread them into a single layer.
Allow them to cool completely before storing.
Why spread them out?
Freshly cooked chole release steam as they cool. If they are left piled together, the trapped moisture can soften the crispy coating.
Kitchen Science: Why This Method Works
Crispiness comes down to one thing: removing moisture.
Soaking hydrates the chickpeas and allows them to cook evenly. However, before they can become crispy, the water on and inside the chickpeas needs time to evaporate.
The two-step air frying process helps achieve this:
400°F initially: Quickly removes surface moisture.
Lower temperature afterward: Slowly develops a crunchy exterior without burning the spices or drying the chickpeas too aggressively.
Adding oil halfway through works better than adding it at the beginning because the dry surface allows the oil to coat the chickpeas more evenly and helps the masala stick better.
Storage
Once completely cooled, store the chole in an airtight container.
They stay crispy for several days at room temperature.
If they lose some crunch over time, simply air fry them again for 2–3 minutes before serving.
