Pav Bhaji
Serves 4 people
Ingredients:
Vegetables:
6 medium sized potatoes
2 big onions
1 big capsicum (2 medium)
2 tomatoes
3-4 Dark green chilli (spicy) OR 4-6 light green chilli (light spicy)
5-6 garlic cloves
Coriander (optional)
Everest Pav Bhaji Masala 3 Table Spoons
Butter: 3-4 Tables spoons
Oil: 3 Table Spoons (You can use butter instead of oil too)
Hot water: 750 ml approx. Use water as per required consistency of Pav Bhaji
Salt: According to taste
Red Chili powder: according to taste
Bread: As per choice
Procedure:
- Boil the potatoes in the morning / previous night in pressure cooker 5-6 vessels on medium flame so that potatoes get cooked properly. We need soft smooth potato mash.When the cooker opens, take our potatoes put them in cold water for 10-15 min and then peel the skin. Put the potatoes in fridge if you boil it previous night. Otherwise leave it outside. Grate potatoes using a big grater (Kisni). If kisni not available, use knife and do thin slices like potato wafers, if potatoes are too soft and cannot be sliced, smash it using hands / spoon.
- Finely chop the onions, tomatoes, capsicum, coriander, green chillies and garlic.
- If you have mixer / blender use it and grind garlic and chilli together.
- Take a big cooking pot / kadhai heat on medium flame, add 3-4 table spoon of oil (Use butter if you wish instead of oil). When the oil is heated, add garlic chilli paste. let the oil soak the flavors as you stir the garlic chilli paste in the oil. You will notice the oil turns a bit green due to chilli.
- Add chopped onions into this. Add little salt and fry the onions, cover with lid for 15-20 seconds. We don't want to let onion brown. Open the lid, add 1/2 Tbsp of Pav Bhaji Masala. Fry the onions in the masala and smell the aroma in the house.
- Add chopped capsicum a little bit of salt and fry the mixture. Cover it with lid for 1-2 min open and check if the capsicum is soft and cooked.
- Add chopped tomatoes, a little salt and 1/2 Tbsp of Pav bhaji masala. Stir the mixture and cover it with lid. Let it cook for 2-3 minutes till the tomato oozes water and you can see oil on the sides of the pan. You will notice the vegetables are cooked and it looks buttery and yummy. If you have a smasher, try and smash the mixture at this stage. If not let it be.
- Add half quantity of smashed potatoes, Salt in proportion to the potato quantity and mix the mixture well. Blend in the red onion, tomato mixture with the potatoes. Add 1 Tbsp of Pav Bhaji Masala to this. Add 400 ml of hot water so that the mixture becomes of the right consistency and does not stick to the pot. Mix well and keep stirring.
- Now add the remaining quantity of smashed potatoes. 1 Tbsp of Pav Bhaji Masala, salt for the potatoes and stir the mixture. Add water as per required consistency.
- Add 1 tsp of Red Chili powder.
- Cover with lid and bring to boil.
- Add 2-3 Spoons of butter. Add a little sugar (1 tea spoon)
- Garnish with Coriander and Serve.
